Lemon Cookie recipe
Lemon cookies are a specialty of Mrs. B and while I am not a baker (or cook) I do have a recipe that might make her proud.
1 c shortening
1.5 c sugar
2 eggs
1 tsp lemon extract (to be honest I just use lemon juice cuz who has lemon extract on hand?)
1 tsp vanilla extract
2.5 c flour (for gluten free just sub in cup for cup)
2 tsp baking powder
1/4 tsp salt
Preheat oven to 350.
Beat shortening and sugar together until light and fluffy. Add eggs and extracts and beat well.
Combine flour, baking powder and salt with a whisk. Add to the creamed mixture and mix.
Drop by heaping tsp onto greased cookie sheets (never greased my cookie sheets either. I like to live on the wild side). Press cookies with a fork to flatter and sprinkle with sugar. You could go all out here and make lemon sugar (mix sugar and a tiny bit of lemon and combine) but you do you.
Bake @ 350 for 8 minutes or until lightly browned. Remove to wire rack to cook. Yield 8 dozen (but honestly more like 6 cuz I like them thicker).
Please don’t ask me about subs for this recipe. I’m a writer and my imaginary cookies tend turn out better than my real life ones (although these are probably my favorite alongside of chocolate with peanut butter chips).
